Chicken and Sausage Gumbo (Classic Southern Comfort Food)

Ingredients

  • 700 g chicken thighs, cut into chunks
  • 300 g smoked sausage or andouille, sliced
  • ⅓ cup vegetable oil

  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • Cooked white rice (for serving)

Instructions

  1. Heat oil in a large pot over medium heat. Whisk in flour and cook, stirring constantly, until a deep brown roux forms.
  2. Add onion, bell pepper, and celery. Cook until softened.
  3. Stir in garlic and cook for 30 seconds.
  4. Add sausage and chicken, stirring to coat with roux.
  5. Pour in chicken broth and add seasonings.
  6. Bring to a gentle boil, then reduce heat and simmer uncovered for 45–60 minutes.
  7. Adjust seasoning and remove bay leaf.
  8. Serve hot over white rice and garnish.
